The rhythm

  1. A window opens

    Your window opens when your drop used to — the first of the month, say. Instead of a race, guests get three days to tell you why they want to be there.

  2. You compose the room

    Read the requests. Balance first-timers and regulars. See who traveled the farthest. See who wrote from the heart.

  3. Guests confirm

    Prepaid and non-transferable, as your seats already are. The difference: every one of them was chosen, not won.

  4. When someone can't come

    It happens. The seat goes back to the room, not to a resale site. The next guest on your list gets a message and fifteen minutes to say yes. Refilled seats are refunded. No scramble, no awkward charge, no empty chair.

  5. Your best guests vouch for the next

    Each guest can vouch for one person. When it comes from a table you still talk about, you already know something about who's walking in.

  6. The night is different

    When you know who's sitting down — where they flew from, why they wrote — you cook for them, not for a reservation.
